Single Pot Still
The whiskey style Ireland kept for itself.
Single pot still whiskey is made at one Irish distillery from a mash of malted and unmalted barley — at least 30% of each — distilled in copper pot stills. The unmalted 'green' barley, a relic of an old malt tax, gives the style its creamy, oily texture and peppery spice. It is legally protected and made nowhere else on earth.

Why unmalted barley?
In the 1780s, the Crown taxed malted barley. Irish distillers answered by cutting their mash with raw, unmalted grain — and discovered the tax dodge made better whiskey: thicker in texture, spicier, unmistakably itself.
Nearly every classic of the style — Redbreast, the Spot range, Powers John's Lane — is distilled at Midleton in Co. Cork, with new-wave houses like Teeling and Dingle now reviving their own pot still mash bills.

i.Single pot still vs single malt — what's the difference?
Single malt uses 100% malted barley; single pot still blends malted with unmalted barley. The unmalted grain gives pot still whiskey a creamier, oilier body and a peppery spice single malts don't have.
ii.Is Jameson a single pot still whiskey?
No — Jameson is a blend, though it contains pot still whiskey in the mix and is made at the same Midleton distillery. Redbreast is essentially the pot still heart of that operation, bottled straight.
iii.What's the best single pot still whiskey?
Redbreast 21 is our top score at 96/100 (about $290). Yellow Spot 12 and Red Spot 15 are the connoisseur's middle path; Green Spot and Redbreast 12 are the smart entries.
