Redbreast 12 Cask Strength

The Benchmark, Unfiltered.

The flagship recipe at natural strength — 55–59% by batch, non-chill-filtered — and the bottle that carries the range's biggest awards.

Redbreast 12 exactly as it leaves the cask: malted and unmalted barley, triple-distilled at Midleton, married from ex-bourbon and Oloroso sherry casks and bottled batch by batch at full strength with no chill-filtration. Bigger, creamier and more intense than the 40% flagship in every direction.

I Origin

REDBREAST 12 CASK STRENGTH — STORY & ORIGIN

The benchmark, with the gloves off.

Redbreast's modern era began in 1991, but the Cask Strength arrived in 2011 — the first time Irish Distillers released the flagship at natural proof: the same 12-year bourbon-and-Oloroso marriage, undiluted and unfiltered.

Each numbered batch is bottled as the vatting comes off the casks — strength has ranged from roughly 55% to 59% — with no chill-filtration, so the pot-still oils stay in the glass. It promptly began collecting Jim Murray's Irish Whiskey of the Year titles.

Same mash, same stills, same casks as the 12 you know — the difference is what they don't do: no dilution, no chill-filtration. That restraint is what the record 97-point Whisky Bible scores were given for.

II On the Palate

REDBREAST 12 CASK STRENGTH TASTING NOTES — NOSE · PALATE · FINISH

The 12, in bold type.

Everything the 40% whispers, spoken at full volume: dense toffee, dark sherry fruit and pot-still spice on the nose; a viscous, oily palate of Christmas cake, dark chocolate and fiery ginger; a very long, clinging finish. Water doesn't dilute it — it tunes it.

IV How to Drink It

HOW TO DRINK REDBREAST 12 CASK STRENGTH

“Redbreast Cask Strength — and the water jug.”

At 55–59% water isn't a compromise, it's the design: every batch finds its best voice a few drops at a time. Ice numbs the oils that make it special — keep it warm, keep it slow.

01

NEAT FIRST

Small sips — meet the batch at full strength before you tune it.

02

ADD WATER SLOWLY

A few drops at a time unlock toffee, fig and baking spice.

03

Cold collapses the oily texture you paid the premium for.

How much hotter is the Cask Strength than regular Redbreast 12?

It's 55–59% versus 40%, so noticeably — but it's famously composed for the strength. The non-chill-filtered oils keep it creamy rather than sharp. Start neat in small sips, then add water a few drops at a time until fire and fruit balance.

REDBREAST 12 CASK STRENGTH · FAQ

Questions, answered.

Six things drinkers most often ask us about Redbreast 12 Cask Strength at the bar.

ANSWERED BY NIALL CONNOLLY · THE ATLANTIC SEAT

i. Is Redbreast 12 Cask Strength worth it?

Yes — for roughly $15–$30 over the standard 12 you get natural strength, no chill-filtration and the range's biggest awards. On intensity per dollar it's one of the best buys in Irish whiskey.

ii. Redbreast 12 Cask Strength vs the standard 12 — what changes?

Same recipe, two presentations. The Cask Strength is bottled at a batch-variable 55–59% without chill-filtration — thicker, darker and much longer. The 40% is gentler and cheaper; the CS is the connoisseur's version.

iii. What awards has it actually won?

Jim Murray's Whisky Bible named it Irish Whiskey of the Year for the 2014 edition with a then-record 97 points for an Irish whiskey, and again for the 2019 edition. Batches are judged individually, but the pedigree has been remarkably consistent.

iv. Why does the ABV change between bottles?

Each numbered batch is bottled at the natural strength of that year's vatting — roughly 55% to 59% so far. The batch code is printed on the label, and character shifts subtly with it.

v. Is it chill-filtered or coloured?

No chill-filtration — that's the point. It may throw a haze with water or cold; that's the pot-still oils, not a flaw. Colour isn't stated on the label, so treat that as unconfirmed.

vi. How should I drink it?

Neat first in a tulip glass, then water a few drops at a time — it's built to be tuned. Skip ice, which mutes the texture, and don't mix it; it's too good and too strong for that.
