Bourbon
America's native spirit — corn, new charred oak, and the law to back it.
Bourbon is American whiskey made from at least 51% corn, distilled to no more than 160 proof, and aged in new charred oak barrels with nothing added but water — the new-oak rule is why bourbon drinks sweeter, darker and younger than Scotch. It can be made anywhere in the US, though Kentucky dominates through history, limestone water and warehouse climate. 'Straight' bourbon adds a two-year minimum age; 'bottled-in-bond' means one distillery, one season, four years, 100 proof.

Why new oak changes everything.
The barrel is the law — every drop ages in new charred oak, which pours caramel, vanilla and baking spice into the whiskey fast; that's why a 6-year bourbon can taste as developed as a 15-year Scotch, and why the barrels then get shipped off to age Scotch, rum and Irish whiskey.
The grain sets the personality — corn-led sweetness first, then the mash bill's rye (spice) or wheat (softness) decides the accent; learn those two dials and every label starts making sense.

No — bourbon can be made anywhere in the US. Kentucky dominates through history, limestone water and climate, but Vermont, Texas and New York now compete at the top shelf.

One distillery, one distilling season, at least four years in a federally bonded warehouse, exactly 100 proof — the 1897 act that was America's first consumer-protection law.
