The Sazerac began as a drink, not a bottle: a bittered cognac toddy served at New Orleans' Sazerac Coffee House in the mid-1800s. When phylloxera devastated France's vineyards in the 1870s, the city's bartenders switched the base to American rye whiskey — and the Sazerac as we know it, rye with Peychaud's bitters and an absinthe rinse, was set.
The rye that carries the drink's name is made by the Sazerac Company at Buffalo Trace in Frankfort, Kentucky, under master distiller Harlen Wheatley. The old label's six-year age statement earned it the nickname 'Baby Saz' next to its cask-strength Antique Collection sibling, Sazerac 18. Today it's NAS at 90 proof — and, like the rest of the Buffalo Trace family, allocated enough that finding it at its honest $30 list price counts as a small win.
