DISTILLERY · ISLAY, SCOTLAND
Lagavulin Distillery
Slow stills and sea air on Islay's south coast.
Founded in 1816 beside Lagavulin Bay — with illicit stills recorded here since the 1740s — Lagavulin makes Islay's most polished peated malt. Its secret is patience: unusually slow distillation (a reported nine hours in the spirit stills) and long aging in Atlantic air. Owned by Diageo, it anchors the Classic Malts range.

LAGAVULIN — THE STORY
Patience, by the bay.
John Johnston founded the legal distillery in 1816, but Lagavulin Bay had hosted illicit stills for decades before — smugglers liked the hidden anchorage below Dunyvaig Castle. The name means 'hollow by the mill.'
The house style is deliberate slowness: the longest fermentation and slowest spirit run on Islay, then years of maturation in sea-sprayed warehouses. Nothing about Lagavulin is hurried — which is exactly what you taste.
Answered by Niall Connolly · The Atlantic Seat
i.Who owns Lagavulin?
Diageo — it anchors the Classic Malts of Scotland range alongside Talisker and Oban. Day-to-day it remains a small site: a handful of stills and a team you could fit in a van.
ii.Lagavulin 16 vs Lagavulin 8 — which should I buy?
The 16 is rounder, sherried and polished; the 8 is brighter, pepperier and about $30 cheaper. Start with the 8 if you're new to peat, the 16 if you want the definitive experience.
iii.Can you visit?
Yes — tours and warehouse tastings run year-round, a short walk from Dunyvaig Castle. Book well ahead for Fèis Ìle week in late May, when the island festival takes over.
iv.Why does Lagavulin taste so smoky?
Heavily peated malt from Port Ellen maltings, long fermentation, that famously slow nine-hour spirit run, and years beside the Atlantic. Smoke goes in early and never leaves.
v.Can we send you our whiskey?
Yes — and it's the only way to earn a Superior Rating. Distilleries are welcome to send bottles for the full panel: two per expression, one decanted into blind samples for the three of us, one sealed on file. All three seats taste it blind and the scores are averaged. Sending buys three honest opinions and nothing else — nobody sees a score before publication.
