Founded in 1846 by Hector Henderson at Port Askaig, Caol Ila — Gaelic for the Sound of Islay it overlooks — is the island's biggest distillery, running some 6.5 million litres a year off six stills. Owned by Diageo, it sends most of its make into Johnnie Walker's smoky core, which long kept the single malt a connoisseur's secret: lighter, grassier peat than the south-shore heavies, with olive oil, lemon and gentle ash.

CAOL ILA — THE STORY
The giant in the strait.
Hector Henderson picked the cove at Port Askaig in 1846 for its water — Loch nam Bàn above the cliff — and named the distillery for the strait it faces: Caol Ìla, the Sound of Islay. Bulk fame came early; bottle fame never quite did. For most of its life Caol Ila has been blenders' whisky, prized for smoke that seasons rather than shouts.
The Victorian buildings came down in 1972 and a glass-walled, six-still powerhouse rose by 1974, staring across the water at the Paps of Jura. It is Islay's biggest distillery at roughly 6.5 million litres a year, and about 95% of the make still disappears into blends — above all Johnnie Walker, which rebuilt the visitor house in 2022 as one of its 'four corners' homes. The 12, launched in 2002, remains the style's calling card.

i.Who owns Caol Ila?
Diageo. Caol Ila came into the Distillers Company family via blender Bulloch Lade in the 1920s and passed down DCL's corporate tree to Diageo, formed in 1997. Today it anchors Johnnie Walker's smoky core, and since 2022 the rebuilt visitor centre has served as the blend's official Islay 'corner'.
ii.Which Caol Ila should I buy first?
The 12 (~$78, our 89) is the definitive bottle — Islay smoke at conversation volume. If you find the 18 (~$150), the extra oil and calm are worth the step; Moch (~$60) is the lighter sketch of the same idea.
iii.Why is Caol Ila gentler than other Islay malts?
Same island, different cut. Its peated malt is specced close to its south-shore neighbours, but tall stills run slowly and a sparing spirit cut leave the heaviest phenols behind — what survives is grassy, lemony smoke rather than tar. Most of the spirit also matures off-island on the mainland, away from the shoreline warehouses that salt the heavier styles.
iv.Why was Caol Ila so hard to find as a single malt?
Because the blends drink it first. With about 95% of output committed to Diageo's blends, there was no permanent official bottling for most of its history — the current range only arrived in 2002. Independent bottlers like Gordon & MacPhail and Signatory filled the gap for decades, and remain a happy hunting ground.
