Hakushu Distillery
The forest distillery — Suntory's fresh, green counterpoint to Yamazaki.
Founded in 1973 in the wooded highlands of Mt Kaikomagatake, Hakushu is Suntory's second single-malt distillery and one of the highest in the world — hidden inside a bird sanctuary. Where sister distillery Yamazaki is deep and layered, Hakushu is built on a fresh, 'green,' lightly-peated house style: cut grass, mint, green apple and a whisper of woodsmoke, shaped by soft granite-filtered mountain water. That signature made it a global cult name — and a hard one to buy: Suntory discontinued the 12 in 2018 and only brought it back, in limited volume, in 2021, with steep price rises since.

HAKUSHU — THE STORY
Whisky from the forest.
Suntory's whisky story starts in 1923, when founder Shinjiro Torii built Yamazaki, Japan's first malt distillery. Fifty years later, with Japanese whisky booming, his son Keizo Saji went looking for a second site with a completely different character — and found it in 1973 high in the forests of Yamanashi, on the granite-filtered snowmelt of Mt Kaikomagatake. Hakushu was designed to contrast Yamazaki: cooler air, softer water, and a deliberately fresh, 'green,' lightly-peated distillate.
Today Hakushu sits inside a protected bird sanctuary, most of its grounds left as woodland, run under chief blender Shinji Fukuyo. Its 25 Year has twice been named the World's Best Single Malt. But global fame outran the barrels: the whisky you can taste today was distilled a decade or more ago, and demand long ago outstripped supply.
One myth, corrected: 'aged Japanese whisky is always genuine, old Japanese whisky.' Not automatically — before 2021 there was no legal definition, and much 'Japanese whisky' was blended with imported bulk spirit. The JSLMA labelling standard (2021, in force 2024) fixed this, but it's a voluntary industry standard, not law. Hakushu is the real thing; the loophole is why provenance is worth checking.

Who owns Hakushu?
Suntory. The distillery is owned and operated in Japan by Suntory Holdings (via Suntory Spirits), while its whiskies are marketed worldwide — including the US — by Suntory Global Spirits, the arm formerly called Beam Suntory (renamed 2024).
Why is it so hard to find and expensive?
Japanese whisky demand exploded faster than distilleries could age stock, so Suntory discontinued the 12 in 2018 and reintroduced it, in tight allocation, in 2021 — with major price hikes since. In the US it's allocated and often marked up, and older expressions like the 25 are mostly secondary-market.
Which Hakushu should I buy first?
Start with the Distiller's Reserve (NAS) for the freshest, most affordable taste of the house style, or step up to the 12 Year for the definitive experience if you can find it near list. The 18 and 25 are premium/collector territory.
Hakushu vs Yamazaki?
Sister Suntory distilleries with opposite personalities. Yamazaki (1923) is richer, fruitier and more sherried; Hakushu (1973) is the high-altitude forest distillery — fresher, greener and lightly peated, with mint, green apple and a wisp of smoke.
