The blending house that taught Japan whisky — from Kakubin highballs to Hibiki.
Founded in 1923, when Shinjiro Torii broke ground at Yamazaki against all advice, Suntory is Japanese whisky's founding house — and above all a blending house, drawing on Yamazaki and Hakushu malt and Chita grain. Its fifth-ever chief blender, Shinji Fukuyo (in the chair since 2009), keeps the house creed of harmony: whisky built for balance, aroma and the highball as much as the snifter. Hibiki is the flag; Toki and Kakubin carry it to the bar.

SUNTORY — THE STORY
The house that blended a nation.
Shinjiro Torii sold wine before he sold whisky — his Akadama port wine bankrolled the 1923 gamble at Yamazaki, Japan's first malt distillery, over the objections of nearly everyone he consulted. When the smoky first bottling (Shirofuda, 1929) flopped, Torii retuned the spirit to the Japanese table: rounder, cleaner, made for water and ice. Kakubin, the square bottle of 1937, was the vindication — and the highball it anchors is still how most of Japan drinks whisky.
The modern house is an orchestra: Yamazaki and Hakushu malts, Chita grain, and the blending room in charge — only five chief blenders in a century of whisky, with Shinji Fukuyo in the seat since 2009 and the founding Torii family still holding the master-blender title. Hibiki, launched in 1989 for the company's 90th year, is the flag; Toki (2016) and Ao (2019) carried the idea outward. Since buying Beam in 2014 the firm has run a global stable — now Suntory Global Spirits — but the blending creed, harmony, hasn't moved.

i.Who owns Suntory whisky?
Suntory Holdings — the private Osaka drinks giant descended from the shop Shinjiro Torii opened in 1899, still closely tied to the founding family. Its international spirits arm has traded as Suntory Global Spirits since May 2024, after the 2014 Beam acquisition; the Japanese whiskies come from Suntory's own Yamazaki, Hakushu and Chita distilleries.
ii.Hibiki vs Toki — what's the difference?
Same pantry, different intent. Both blend Yamazaki and Hakushu malt with Chita grain, but Hibiki Japanese Harmony (~$100) is tuned as a slow sipper — honey, orange peel, a mizunara thread — while Toki (~$35, our 84) runs brighter and grain-forward for the highball. Start Toki with soda; graduate to Hibiki neat.
iii.Who blends Suntory whisky today?
Chief blender Shinji Fukuyo — only the fifth person to hold the title in Suntory's century of whisky-making — has led the blending room since 2009, alongside the Torii family's third-generation master blender. The team noses hundreds of cask samples a day to hold Hibiki and Toki on spec.
iv.Which Suntory should I buy first?
Toki (~$35, our 84) is the honest first bottle and the best highball tutor. For sipping, Hibiki Japanese Harmony (~$100) is the house statement; the Chita (~$60) is the quiet in-between. Hibiki 21 is a special-occasion hunt, not a starter.
v.Can we send you our whiskey?
Yes — and it's the only way to earn a Superior Rating. Distilleries are welcome to send bottles for the full panel: two per expression, one decanted into blind samples for the three of us, one sealed on file.
