The tiny distillery that made Japan a whisky superpower.

Chichibu is a minuscule craft distillery in the mountains of Saitama, built in 2008 by Ichiro Akuto after he rescued the last casks of his family's shuttered Hanyu distillery — the stock that became the legendary Ichiro's Malt 'Card Series.' It runs on old-world craft most giants abandoned: on-site floor malting, mizunara-wood washbacks, tiny Forsyths pot stills, and its own cooperage. Despite output a fraction of a single Suntory warehouse, Chichibu has taken World Whiskies Awards 'World's Best' honours several times since 2017. It matters because it is authentic Japanese-made craft whisky — the opposite of the 'Japanese-branded, sourced-abroad' bottles the industry's 2021 reforms targeted.

CHICHIBU — THE STORY

Ichiro Akuto saved the casks.

Ichiro Akuto grew up in a family that had brewed sake in Saitama since 1625 and later ran the Hanyu whisky distillery. When the family firm hit trouble, Hanyu was sold in 2004 and the new owners had no use for its ~400 aging casks. Rather than watch his family's spirit be discarded, Akuto borrowed money, bought the casks himself, and founded Venture Whisky. Those casks became 'Ichiro's Malt' — including the now-mythical Card Series, released 2005–2014 with a playing card on each label.

Cask stock is finite, so Akuto did the harder thing: he built his own distillery. In 2008 Chichibu became the first new Japanese whisky distillery in about 35 years — a tiny operation with two small stills, on-site floor malting, mizunara washbacks, and its own cooperage. Within a decade it was winning 'World's Best' at the World Whiskies Awards and helping ignite Japan's craft-whisky boom. It remains defiantly independent and hand-scaled, with demand vastly outstripping supply.

One myth, corrected: 'all Japanese whisky is craft, made in Japan.' Not true — for years bottles labelled 'Japanese whisky' held spirit bulk-imported from Scotland or Canada, which is why the 2021 JSLMA standard exists. Chichibu is the genuine article; tellingly, when Akuto blends foreign whisky he labels it honestly as 'World Blended,' not 'Japanese whisky.'

Who owns and makes it?

Venture Whisky, an independent, family-run company founded in 2004 by Ichiro Akuto, still president and master distiller. It's not owned by Suntory, Asahi/Nikka or any conglomerate — a rarity among globally famous Japanese whiskies.

Why is it so scarce and expensive?

Chichibu is genuinely tiny — two small stills — and only started distilling in 2008, so mature stock is minute against worldwide demand. Most single malts release in a few hundred to a few thousand bottles, so they sell out instantly and mostly trade on the secondary/auction market at multiples of list.

How can I actually try it?

Start with Ichiro's Malt & Grain 'World Blended' (~$130) — the accessible entry and usually the one you can just buy. For the single malt, the annual 'Chichibu The US Edition' (~$400) is the most obtainable if you catch an allocation. Japanese-whisky bars are often the cheapest way to taste the rarer releases by the pour.

Is it real Japanese whisky?

Yes — the single malts are fermented, distilled and matured in Japan, meeting the 2021 JSLMA standard (in force 2024). The one caveat: the 'World Blended' bottling deliberately includes non-Japanese whisky and is honestly labelled as such.
