From colonial stills to World Whisky
Australia's whisky history reaches back to early colonial distilling — including Tasmania in the 1820s — but the modern craft era really begins with Bill and Lyn Lark in the early 1990s. Lark helped restart small-scale Tasmanian whisky, and Sullivans Cove later proved the category could win world-level attention.
The defining Australian move is cask identity. Where Scotch leans on ex-bourbon and sherry traditions, Australian producers reach for local red wine, fortified wine, port, Apera, tawny and small casks. Warmer, more variable climates push maturation faster, giving even young whisky deep colour, fruit, spice and oak intensity.
Is Australian whisky legally protected?
Not as a national GI. It's regulated as a spirit (37%+ ABV under the Food Standards Code), but there's no protected 'Australian Whisky' appellation like Scotch or Single Malt Welsh Whisky.
